In Season at Botanical Hotel – Truffles

Blake Werner, Executive Chef

There is nothing quite like the distinct aroma of a fresh truffle.  It is unmistakably pungent and alluring.  At Botanical Hotel, truffles are a favourite seasonal ingredient of ours, and we look forward to truffle season each year with anticipation.

This season we’re proud to serve Oak Hill Truffles for their unparalleled quality, savoury flavour and complexity.

Established in 2007 by Ian and Marilyn Woodhouse, Oak Hill boasts 500 French Oak trees and 500 English Oak trees in the foothills of Paddock Creek Valley in Victoria’s central highlands. This unique location provides an ideal environment for cultivating quality truffles – good soil pH and mineral levels, along with mild climate to name just a couple of desired attributes – and this in turn has led to Oak Hill Truffles rightfully earning a reputation as a leading truffle producer.

Our Winter menu features ample opportunities to enjoy these magnificent new seasons’ truffles.  Why not try truffle with our Risoni, cime di rapa, gorgonzola and pine nuts.  Or with our Chicken ballotine, mushrooms, chestnuts and celeriac puree for a delightful combination.

And if you haven’t tried the unexpected combination of dessert with truffle, we highly recommend you match our chocolate fondant with freshly shaved black truffles.  It’s a winning, delectable match!

Truffle season in Victoria typically lasts from mid-June to the end of August and we’re looking forward to sharing this amazing product with you.
