Est Est Est was at the forefront of Melbourne hospitality in the 90’s, and its passion and wild flair helped shape our industry.
Chef Donovan Cooke and front man, Franklin Heaney, along with industry peer, Rabih Yanni will wind back the clock, serving a five course menu featuring some of Est Est Est’s most popular dishes with 2026 flair.
Recently returning from his tenure in Hong Kong, Chef Donovan Cooke is excited to revisit some of his favourite dishes.
‘After 30 years, the dishes I will showcase draw inspiration from the cuisine which featured on our menu at the time, reimagined for today. These classic combinations remain beloved and relevant, not only to myself but most importantly to our guests.’ – Donovan Cooke
Each course will be matched with iconic wines from cult Victorian producers such as Bass Phillip, Bindi and Giaconda which were listed with pride on Est Est Est’s wine list.
Franklin Heaney will be leading the charge in the dining room, bringing his nuanced style of service to your table.
This is a night which will see the magic of Est Est Est come to life and promises to have us all reliving past delights.
