Blake’s approach to food is shaped by a deep appreciation for classical technique and an unwavering commitment to quality. After spending years honing his craft in Michelin-starred kitchens across France and Spain, he returned home to lead the team at some of Melbourne’s finer establishments.
In 2023, Blake joined our team as Head Chef and has recently stepped in to the role of Executive Chef bringing with him a refined, European edge to Botanical’s seasonal menus.
Away from the pass, Blake finds inspiration in life’s simple pleasures. He’s passionate about travel, dining out (a lot of it), and barracking for the Blues through thick and thin (more thick than thin). On weekends you’ll often find him at Prahran Market, stocking up on ingredients for Sunday lunch with friends and family. Cooking has always been personal – some of his earliest memories are of making pasta with his mother, a tradition rooted in her Italian heritage which continues to shape his food philosophy today.
With his new chapter underway at Botanical Hotel, Blake brings renewed energy and focus to the kitchen, with his passion, precision and seasonal approach setting the tone for what’s to come.
