Bindi is a boutique premium producer of high quality wines. Their vineyards are located in the Macedon Ranges, one of Victoria’s coolest wine regions. As a result, they produce delicate and elegant expressions of Pinot Noir and Chardonnay with enhanced complexity. The Dhillon family founded the winery in the 1950’s and still run the business today. Even though wine is their main focus, they have large areas dedicated to native vegetation and bush land. As a consequence, they are maintaining the natural ecosystem.
The 2018 Bindi Kostas Rind Chardonnay is an intense, mineral driven Chardonnay showing lean orchard fruits and a long finish. Orange blossom, spice and hints of hazelnuts are all evident on the palate. There is a taut acidity present, derived from partial malolactic fermentation. Delicate cashew and yeasty notes come from four months of ageing on lees. Fermentation takes place in 20% new French oak barrels, giving the wine hints of spicy oak and toast.
