Jasper Hill is a sustainable and organic farm located in Heathcote. They practice minimal intervention in both the vineyard and the winery and plant the vines on their own rootstock. By doing so they amplify the individual characteristics of the grape. Manure from their own farm is used to fertilise the vines, helping maintain the locally occurring microbiome of the land. The grapes are then selected by hand before use in the wines.
Georgia’s Paddock consists of 12 hectares of Shiraz vines and 3 hectares of Riesling vines, both yielding a modest 3 tonnes per hectare.
The Jasper Hill Georgia’s Paddock Shiraz is full of black and red fruits such as ripe raspberry and blackberry. Purple plum and complex spice notes follow on the palate. This is a big wine with a full body and tannic finish. It is balanced by the wine’s naturally high acidity.
The Jasper Hill Georgia’s Paddock Shiraz is a great match to a juicy steak and also to strong cheddar cheese.
