Located in picturesque southern Burgundy, Giles Morat only has 6 hectares of vines in Pouilly Fuisse and Saint-Veran. Most importantly to Gilles is that his wines reflect the terroir and land. He achieves this through minimal intervention in the winery. He carries out all the labour by hand and does not use chemical pesticides or herbicides.
The 2017 Pouilly Fuisse uses grapes sourced from 25 year old vines. Part of the wine is barrel fermented and aged for 12 months on oak, infusing subtle and well-integrated oak characteristics. Blossom and grapefruit notes hit the nose along with fresh lemon and hints of cashew from ageing on lees. The flavours are those of Macon, however with great precision and structured acidity. Green apple and peach give way to a mineral finish.
Enjoy with herbed, baked Camembert or veal in a creamy sauce.
