David Manning has a long history working with wine both in wholesale as well as as a winemaker. After having subsequently completed a degree in winemaking and viticulture, he started his own micro brand Caviste in 2016. Initially focusing on two varietals, David now produce four wines all inspired by the restrained styles of France.
The 2017 Chardonnay was made from the Yarraland Vineyard, in the southern part of the Yarra Valley. Initial fermentation took place on steel before continuing on old French oak. The result is a complex, nutty, but pure expression of grapefruit zest and white peach. Notes of minerality shine through the creamy texture, further enhanced by a refreshing acidity.
Enjoy as aperitif or with a seared fillet of salmon. It would also be delicious with creamy pasta dishes.
