Vincent Geantet has been running Domaine Geantet Pansiot since 1989 and is the third generation vigneron of the family. The vineyards are kept without the use of herbicides and the grapes go through three stages of sorting before entering the tank. Uncrushed berries are cooled to 10C for 10 days before being raised to 22C to begin fermentation. This complex and tedious process leads to delicate and pure wines with a signature flavour profile.
Their 2016 Pinot Fin displays intense and vibrant flavours of morello cherry and a firm and delicious finish. The mouthfeel is velvety with medium acidity and a fine-grained texture. A more rustic example with refreshing flavour profile, yet ripe and supple tannins. Will keep for several years to come as it is not intended for early consumption. Pair with a classic beef bourguignon for optimal enjoyment.
