Impeccable attention to detail is one way of describing Ornellaia and their winemaking approach. They pick their grapes in stages, determined by their level of ripeness and quality. Following Tuscan tradition, they believe the mouth is the best tool for analysing the grapes. They taste berries from each parcel to determine when they have optimum sweetness, flavour and tannin levels. They ferment each parcel separately before they decide on the blend, involving as many as sixty different batches.
The Tenuta dell’Ornellaia Cabernet Blend is a big wine with herbaceous tea leaf aromas and a lifted bouquet of black berry fruits. The palate is rich and concentrated with depth and intensity. Jammy dark cherry, wild-flowers and liquorice seamlessly merge with smoke and tobacco notes. The tannins are ripe and well integrated after time in the bottle. Cabernet Sauvignon’s naturally high acidity melds it all together in a long, mineral driven finish. It is then aged for 18 months on 70% new French oak. This wine benefits from decanting before drinking.
