Paternoster is a small, boutique winery in Emerald, Victoria. Although they specialise in Pinot Noir, they also produce excellent cool climate Chardonnay and Shiraz. Their vineyards are densely planted and they refuse to irrigate or to use fertiliser. These practices encourage the roots to grow very deep, further enhancing the influence of the terroir on their wines. Furthermore, they adjust their yield to be no more than 2.5 to 4 tonnes per hectare. As a result, their wines are intensely concentrated and with outstanding depth of flavour.
Paternoster Heaven’s Door Pinot Noir is the most premium of their Reserve range. Not every vintage results in such high quality grapes, but when the conditions are right the results are outstanding. The 2007 vintage is the current release, showcasing the stringent criteria they set for themselves. Expect flavours and aromas of dried fruit, game, sweet spice and herbs with an unmistakable backbone of eucalyptus. The tannins are smooth and well integrated from the use of high quality French oak. Heaven’s Door is unfiltered and has seen minimal additions of sulfur dioxide. Decant to avoid sediment.
